description This work outlines the evolution of Mexican cookie industries during the twentieth century. My argument is that these companies, founded mostly by Spanish immigrants,  have turned from small family businesses to great corporations, vertically organized in response to uncertainty, scarce market integration, and regional differences in consumption patterns. The Mexican cookie industry reveals that great businesses can be born in developing economies, characterized by unequal distribution of income.

En este trabajo pretendo esbozar la evolución de las empresas galleteras mexicanas a lo largo del siglo XX. En él defiendo la tesis de que estas firmas, fundadas en su mayor parte por inmigrantes españoles, han mudado de pequeñas firmas familiares  a grandes corporaciones muy integradas verticalmente en respuesta  a la incertidumbre, la escasa integración del mercado y las disparidades regionales en el consumo. En suma, la industria galletera mexicana demuestra que es posible el nacimiento de la gran empresa en economías en desarrollo y caracterizadas por un desigual reparto de la renta.
