Sumario:This work outlines the evolution of Mexican cookie industries during the twentieth century. My argument is that these companies, founded mostly by Spanish immigrants,  have turned from small family businesses to great corporations, vertically organized in response to uncertainty, scarce market integration, and regional differences in consumption patterns. The Mexican cookie industry reveals that great businesses can be born in developing economies, characterized by unequal distribution of income.
