| description | This article studies food folklore and identity in contemporary rural Kazakhstan, particularly the Dungan narodnost, which is a Chinese-speaking Muslim community historically perceived as an example of cultural conservation. This work aims to provide an overview, from the Dungan perspective, of the features that determine the cultural differentiation and ethnic classification within the region. Based on fifteen months of fieldwork carried out between 2011 and 2013 in Southern Kazakhstan, the work analyzes the Dungan’s material culture, specifically their food and utensils. The article is further divided into four sections: a general description of Central Asia’s Dungans, a pair of ethnographic vignettes, the vignette’s context, and, lastly, ways in which cultural conservation and folklore can be studied from a new perspective within the Central Asian context. |

Este artículo aborda el estudio del folclore culinario e identidad en el Kazajistán rural contemporáneo, centrándose en la narodnost’ dungana, una comunidad musulmana sinófona vista históricamente como un ejemplo de conservación cultural. El objetivo del trabajo es ofrecer un panorama, desde la perspectiva dungana, de los rasgos que inciden en la diferenciación cultural y clasificación étnica en esta región. El trabajo parte del análisis de la cultura material de la comunidad, particularmente la comida y sus instrumentos, basado en quince meses de trabajo de campo (2011-2013) en el sur de Kazajistán. El estudio está dividido en cuatro secciones: una descripción general de los dunganos de Asia central, específicamente los dunganos shanxi; un par de viñetas etnográficas; la contextualización de las viñetas; y finalmente, líneas bajo las cuales la conservación cultural y el folclore pueden ser interpretados desde una nueva perspectiva en el contexto centroasiático.
