| description | This paper is part of a larger investigation on the Mexican stockbreeding industry between the last decades of the 19th century and the first decades of the 20th. Based on beef slaughter indexes, our goal is to reflect on the supply conditions in Mexico City (the main market of the country) and their relation to the stockbreeders in the North, within the same historical context. The main argument springs from the fact that the most recent historiography on the subject continues to repeat old statements that relate the so-called precarious levels of meat consumption in the country’s capital during the Porfirio Díaz administration with the meat exports to the United States carried out by northern stockbreeders. Existing evidence suggests that, in order to explain the meat supply deficiency in Mexico City, one must go past blaming the external market, as evinced when comparing the situation with the case of Rio de Janeiro (Brazil). Moreover, since the attempts at industrializing the meat sector were interrupted during the Revolution, the old supply system was maintained, but not without consequences for a population that, year after year, during the three first decades of the 20th century, added an increasingly lower meat portion to their diet. |

Este artículo es parte de una investigación más amplia acerca de la industria ganadera mexicana entre las últimas décadas del siglo XIX y las primeras del XX. El objetivo es recurrir a los indicadores de matanzas de vacuno para reflexionar acerca de las condiciones de abasto en la ciudad de México (en principal mercado del país) y su relación con los criadores del norte, en el mismo contexto histórico. El argumento central está relacionado con el hecho de que la historiografía más reciente sobre el tema continúa repitiendo antiguas aseveraciones, al vincular, lo que denominan ser los precarios niveles de consumo de la carne en la capital de la república, durante el porfiriato, con las exportaciones que los norteños realizaban para Estados Unidos. Evidencia disponible sugiere que las explicaciones acerca de las deficiencias en el suministro capitalino de carne deben ir más allá de culpar al mercado externo, como se observa a partir de la comparación con el caso de Río de Janeiro (Brasil). Más aún, como los intentos de industrialización de la carne fueron interrumpidos en pleno contexto revolucionario, el antiguo sistema de abasto fue preservado, pero no sin costos para una población, que año tras año, a lo largo de las tres primeras décadas del siglo XX, añadía una cantidad menor de carne a sus platillos.
