| description | The Columbian Exchange was first studied in relation to Europe and America; subsequently the Asian and African dimensions of it were explored. It is useful in this context to look at the attitude of the Islamic regions towards American products: instead of the initial distrust and rejection of Europe, India and China, in Islam these products were embraced at an early date and deeply incorporated into the culinary culture. El intercambio colombino se estudió primero en relación con Europa y América; posteriormente se exploraron las dimensiones asiáticas y africanas. Resulta útil observar, en este contexto, la actitud de las regiones islámicas respecto a los productos americanos: en vez de la desconfianza y el rechazo inicial de Europa, India y China, en el islam dichos productos fueron acogidos en fecha temprana e incorporados profundamente a la cultura culinaria. Ello se debe a factores climáticos, pero sobre todo a una larga historia de adopción de especies vegetales que tuvo como episodio central la llamada “revolución agrícola árabe”.
