Este texto ofrece una revisión bibliográfica, enfocada particularmente en la producción académica sobre Medio Oriente, del campo de los estudios de la comida, así como las diversas aproximaciones teóricas y documentales empleadas en él. La presente revisión traza la evolución de la disciplina, desde los análisis estructuralistas y la historia social temprana, hasta la economía política de los alimentos. El objetivo central es analizar direcciones emergentes en el campo para ilustrar cómo la alimentación puede ser una herramienta de gran valor para el entendimiento de dimensiones sociales, culturales y económicas.
