總結:The Columbian Exchange was first studied in relation to Europe and America; subsequently the Asian and African dimensions of it were explored. It is useful in this context to look at the attitude of the Islamic regions towards American products: instead of the initial distrust and rejection of Europe, India and China, in Islam these products were embraced at an early date and deeply incorporated into the culinary culture. This is due to climatic factors but above all to a long history of adoption of plant species whose central episode was the so-called “Arab agricultural revolution”.
